Recipe for French onion soup

Ingredients

Onions, approx one per person
Flour
Stock,preferably beef
Salt and pepper
A dash of Red wine, port or Brandy (whichever you prefer)
Uncut bread
Gruyere or Parmesan cheese

Method

Fry the onion in butter over a low heat.

When the onions have nicely softened and are golden in colour, sprinkle a little flour on them and stir in well.
 
Add the stock a little at a time, stirring constantly to thicken, keeping it on a low heat. 

Add salt and pepper to taste and a dash of Red wine, Port or Brandy ( whichever you have chosen).

Bring to the boil, reduce the heat and cover.Simmer for 30 minutes.
 
Cut a slice of the bread, toast it and place it in the bottom of the soup bowl,ladle the soup on top of the bread.

When ready to serve sprinkle a handful of your chosen cheese over the top and enjoy!
